FISH KABAB/FISH RECIPE/KABAB RECIPE /FIVE MINUTES SNACKS

 



It is very difficult to make various evening snacks as daily basis, difficult to choose everyday what to

 make in evening with hot tea or coffee.

Bengali are always fond of fish; we are not out of that class. They have lots of recipes where fish is the

 main ingredient.

Here my recipe is also fish related.

Today I am happy to share with you “FISH KABAB “recipe.

INGREDIENTS: 1) FISH PIECES: (3 IN NUMBERS)

2) CHOPPED ONION: 1 CUP

3) CHOPPED GREEN CHILIES: ¼ CUP

4) CHOPPED CORIANDER LEAVES: 1 CUP

5) CHICK PEA FLOUR: 1 CUP

6) GARAM MASALA POWDER: 1 TABLESPOON , RED CHILI POWDER : 1 TABLESPOON

7) WHITE OIL: for frying, I use Rice bran oil (it is according to your choice).

8) According to your taste.

HOW TO MAKE: Keep a karai on gas oven and switch on the gas. Roast chickpea flour slightly, just to

 remove the raw flavor from flour. Add little water (1 tablespoon) and salt in it. Stir continuously chick

 pea flour; don’t make the paste of chickpea flour. Make a dried and free form of chick pea flour.

Now in other hand marinate fish pieces with little turmeric and salt to fry slightly. Remove all fish

 bones from fried fish pieces .Smash fish fleshes properly with the help of palm.

Take a bowl; keep all smashed fish pieces in it. Add raw chopped onion, coriander leaves, green chilies

 in it with little salt, Kashmir red chili powder, garam masala powder and ready chickpea flour. Mix all

 ingredients well in proper way. Give kabab shapes from the ready-mix. Place those on a flat plate .

Now deep fry kababs on medium heat; it will give perfectly cooked kababs. High flame of gas will burn

 kababs outside and inner portion will not properly cook.

Our “FISH KABAB” is ready to serve. Enjoy kababs with mayonnaise.

SIMPLE CHICKEN PAKORA/EVENING SNACK/YUMMY CHICKEN PAKORA/CHICKEN DUMPLING


 

There are varieties chicken pakoras we came to know from you tube and other net sites. Today I am

 sharing a simple chicken pakoras for which there is no need of any extra ingredients .We only need

 ingredients which are always present in our kitchen.

Here is the recipe:




INGREDIENTS: CHICKEN PIECES; 200 GRAMS

WHITE OIL (SOYABIN OIL OR RICE BRANE OIL): 150 GRAMS

CURD: 2 TABLESPOONS.

CORRIANDER SEEDS: 1 TABLESPOON.

CORRIANDER POWDER: 1 TEASPOON

ONION PASTE: 1 TEASPOON.

GINGER GARLIC PASTE: 2 TEASPOONS.

GREEN CHILLY PASTE: 1 TEASPOON

CORIANDER LEAVES: 1 TABLESPOON.

FENUGREEK LEAVES: 1 TEASPOON.

EGG: 1

TURMERIC POWDER: 1 TEASPOON.

RED CHILLY POWDER: 2 TEASPOONS.

CORN FLOUR: 1 TABLESPOON.

CHICK PEA FLOUR: 1 TEASPOON.

MOIDA (WHITE FLOUR): 1 TEASPOON

SALT: ACCORDING TO YOUR TASTE.




PROCEDURE: Cut chicken pieces in small square pieces. Mix all ingredients which are mentioned

 above with chicken pieces. Only chick pea flour, corn flour and moida mix with chicken just before

 frying.  Keep aside marinated chicken for 2 hours. Keep frying pan on gas and pour sufficient white oil

 to fry. First heat the oil with full flame, then slow the flame in medium position. Now add 3 flours and

 mix well. Start frying pakora. Always fry pakoras with low flame, otherwise it will burn outside and

 inside portion will not cooked properly. Drainout pakoras from oil and keep on tissue paper so that all

 excess oil from pakoras are soaked by tissue papers.


Serve chicken pakoras with tomato sauce and enjoy with hot tea.

PUMPKIN CUTLET (INDIAN SNACK RECIPE)



My last blog  was of making Lauki pakora .It was appreacited though it was a simple recipe.

Today I am coming with pumpkin cutlet .

.Pumpkin is  nutritious orange vegetable and highly dense food. Pumpkin is rich in vitamin A ,C and 

E and antioxidants .

In summer it is a good and healthy vegetable .It helps to fight against sun damage and  wrinkles .


Most of people dislike pumpkin for its insipid taste .I also do not like its bland taste. Kids do not like this 

vegetable .For this I   experimented to make healthy ,crispy and crunchy pumpkin cutlet.


Here is the recipe .



COOKING TIME : 15 minutes.

INGREDIENTS :1)Pumpkin : ½ kg

2)Lentil seeds (Masur dal) :75 grams to 100 grams

3)Green chilly 2 to 3 (cut into small pieces)

4)Onion : slice into small pieces.

5)Bread : 4 pieces

6)Mustard oil :250 litres.






HOW TO MAKE:


1)Grate pumpkin and keep aside.Soak lentil seeds for 6 to 7 hours .


2)Toast breads in high flame .Keep for cooling .Break breads in small pieces and make dust in grinder.


This is  the process of making bread crumps.Grind lentil seeds .Grinding of masur dal should not so  smooth. 









3)Take a big plate and mix lentil seeds paste ,chillies ,onion with grated pumpkin.Add little amount bread 

crump and salt accordingly.






4) Shape the mixture in cutlet with help of palm. Now coat pumpkin cutlets in bread crumps properly .








5)Fry cutlets in mustered oil for good flavour .In first stage heat oil in high flame and then keep the flame in

medium for frying .It will help to make cutlet crispy  and properly cook inside .








Our pumpkin cutlets are ready to serve .It is also an evening snacks as lauki pakora.





Take cutlets with sliced onion and hot tea .

LAUKI PAKORA(BOTTLE GOURD PAKORA)




Lauki pakora is a delicious snack recipe .It is something different from ordinary pokora recipe.
In this hot season bottle gourd is a very healthy vegetable .Lauki is cooling in nature .It helps to supply water in our body , it is easy to digest .It is good diuretic.
Eating lauki gives a relaxed feeling, lauki juice rejuvenate skin .
Lauki benefits in curing ailments like diabetes ,cholesterol ,weightloss ,digestive track problems .
100 grams of bottle gourd contain 15 calories.This vegetable is full of water (about 92%) and minerals to keep our body hydrated .


Now I am ready to share you the simple recipe .



INGREDIENTS: 1) Bottle gourd or Lauki –
2) Gram flour: 150 grams
3) Red chilly powder : 2 to 3 tablespoons
4) Red chilly :2 to 4 (Cut into small pieces )
5) Turmeric powder : 1/3 spoon or less than that.
6) White oil to fry.

Salt to taste.




Mix all ingredients ( gram flour ,white oil ,turmeric powder,red chilly powder ,salt).





Slice lauki in a good looking shapes .I cut these in half moon shape .































Keep the mixture aside 
for 20 minutes for better result in frying.It will make a crispy snack.








After the standing time we are ready for frying.

 Dip lauki slice in ready batter and pour in hot oil.


Deep fry the sliced lauki pieces .

Drain the eccess oil and take out from karai .


Our hot lauki pakora is ready .Take these pakoras with hot tea.







Enjoy  pakoras as evening snacks .
