GANGARAMPUR KHEER DOI/NORTH BENGAL SWEET CURD

 

Bengal is the state of sweets. We get various kind of sweets and desserts in this state. Fresh channas (cottage

 cheese) is the main ingredients. Different special and ordinary sweets are available from” moiras”

 (sweet makers) from this fresh chanas. In Kolkata we find various fusion sweets like “JOL BHORA”,

 “BAKED ROSOGOLLA”,”MONOHORA” etc. We feel a heavenly touch to have these.


Our state is also especially famous of its unique curd preparation commonly known as “MISTI DOI”. It

 is a world famous dessert. Making of sour curd with sugar is an authentic and popular item for

 Bengalis. Its business spread all over the world. Today I will discuss about not only about sweet curd,

 also “KHEER DOI”, curd made of kheer.”Kheer” means condensed milk made by sweet makers. The

 proper ratio of milk and sugar is necessary for this yummy kheer doi.


Due to transferable job of my husband we have to go here and there inside the state. We stayed in different

 regions of Bengal and came to know about different sweets and desserts. Now we are in north of Bengal. Last

 week we visited Balurghat town. While travelling from Raiganj to Balurghat we came across a region of a

 unique preparation of curd.








A small town named Gangarampur is famous for its “MISTI DOI” and “KHEER DOI”. “NAYA BAZAR”, a place in

 Gangarampur where we found many factories for sweet curd and kheer curd. We visited a sweet shop

 “MAHAPROVU DOI BHANDAR”, a famous and authentic shop for misti doi and kheer doi.


The proprietor of the shop told us their sweet business is  from long 40 years and they always try to

 maintain the best quality product for their customers. It was known they sell in bulk quantities all across

 Bengal. They produce 1 quintal kheer doi per day. These curds are distributed in not only north Bengal but also

 in south Bengal. This is distributed in Siliguri, KoochBihar, Moina guri, Nata guri and so on.

“KHEER DOI” is so tasty, yummy, mouth watering, palatable or something more preposition I can add in it.


 There are many sweet curd factories in the villages of Gangarampur.

The villagers make kheer doi in mud ovens .They use tamarind wood logs for fire (I came to know from

 villagers).Boil huge quantiy of milk for 4 to 5 hours to make it thick. After that they add sugar with boiled milk.

 Again they boil milk for richer quality and make it dense. After 3 hours they pour dense milk in yogurt mud pot

 (this is like 1 kg,1/2 kg etc).They clean yogurt pots with machines. Now in a big tin container they mix old curds

 very well with their hands. This curd is of 2 to 3 days before. This is known as “gad”. This is very important for

 making new curd. They add this old curd in each new yogurt pots where they kept dense milk .They keep a big

 lid on these yogurt pots and rest them for 10 hours. After 10 hours “KHEER DOI” is ready. It is really

 a awesome work to do this.
