KOMOLA BHOG (BENGALI SWEET DISH)

Komola bhog is Bengali desert .It is sweet dumpling made of cottage cheese .

Rosogolla is Bengali sweet which is made of cottage cheese .It is soft and spongy
.
Komola bhog is orange coloured rosogolla ,slightly bigger than regular rosogolla.
Making of  Komola bhog is not so easy matter.I tried several times to make it perfect .Finally I did it .
I learned it from my mother.I am sharing the recipe with you .

INGREDIENTS : 1)Milk : 1 litre
2)Lemon : 2 to 3 pieces.
3)Cottage cheese :Making from 1 litre milk .
4)Sugar : 1 kg.
5)Water : 2 litres
6)Cardamom : 3 to 4 pieces
7) Orange zest ( skin of orange ):2 teaspoons
8 ) Nokuldana( sugar ball) : 2 of each sugar ball

PROCEDURE:
1)Boil 1 litre milk in a container .At the boiling point of milk squeeze 4 to 5 pieces of lemon juice for making cottage cheese .
Take a cotton cloth for straining whey from cottage cheese aka chana .
Chana should not be moist .If you are using homemade chana place a weight over it more than 2 hours.

2)Making of sugar syrup :Take 2 litres of water in a container and keep it on gas  oven .

Add 1 kg sugar in it .Start heating with high flame .While making the syrup
You may add orange juice . If you add orange juice , replace equal amount of water .
I was not used orange juice .Add 2 to 5 cardamoms in sugar syrup. The consistency of Sugar syrup of Komola bhog should thick .It shouid three strings sugar syrup .

3)Add orange zest in cottage cheese.Smash cheese very well so that no lump is left in it .

4 ) Make balls of chana with the help of hands . Make small hole in each chana ball and keep nokuldana in it .

5 )Keep sugar syrup on high flame and add ready chana balls in it .

Cook 10  for minutes in flame without opening the lid .
6) After 10 minutes open the lid and add cup of water to make the syrup light.
Keep the flame in lower for 20 minutes .

7)Now our ready  komola bhog became so soft and spongy with good orange fiavour .

8)As I was not used artificial colour my ready Komola bhog had no colour .It may be colourless but healthy to take.

I was so excited for making this authentic Bengali dish .My grand daughter was very happy to have it .She told me to make it further .

.Happy for sharing the recipe .

Thank you .
