PUMPKIN CUTLET (INDIAN SNACK RECIPE)



My last blog  was of making Lauki pakora .It was appreacited though it was a simple recipe.

Today I am coming with pumpkin cutlet .

.Pumpkin is  nutritious orange vegetable and highly dense food. Pumpkin is rich in vitamin A ,C and 

E and antioxidants .

In summer it is a good and healthy vegetable .It helps to fight against sun damage and  wrinkles .


Most of people dislike pumpkin for its insipid taste .I also do not like its bland taste. Kids do not like this 

vegetable .For this I   experimented to make healthy ,crispy and crunchy pumpkin cutlet.


Here is the recipe .



COOKING TIME : 15 minutes.

INGREDIENTS :1)Pumpkin : ½ kg

2)Lentil seeds (Masur dal) :75 grams to 100 grams

3)Green chilly 2 to 3 (cut into small pieces)

4)Onion : slice into small pieces.

5)Bread : 4 pieces

6)Mustard oil :250 litres.






HOW TO MAKE:


1)Grate pumpkin and keep aside.Soak lentil seeds for 6 to 7 hours .


2)Toast breads in high flame .Keep for cooling .Break breads in small pieces and make dust in grinder.


This is  the process of making bread crumps.Grind lentil seeds .Grinding of masur dal should not so  smooth. 









3)Take a big plate and mix lentil seeds paste ,chillies ,onion with grated pumpkin.Add little amount bread 

crump and salt accordingly.






4) Shape the mixture in cutlet with help of palm. Now coat pumpkin cutlets in bread crumps properly .








5)Fry cutlets in mustered oil for good flavour .In first stage heat oil in high flame and then keep the flame in

medium for frying .It will help to make cutlet crispy  and properly cook inside .








Our pumpkin cutlets are ready to serve .It is also an evening snacks as lauki pakora.





Take cutlets with sliced onion and hot tea .

LAUKI PAKORA(BOTTLE GOURD PAKORA)




Lauki pakora is a delicious snack recipe .It is something different from ordinary pokora recipe.
In this hot season bottle gourd is a very healthy vegetable .Lauki is cooling in nature .It helps to supply water in our body , it is easy to digest .It is good diuretic.
Eating lauki gives a relaxed feeling, lauki juice rejuvenate skin .
Lauki benefits in curing ailments like diabetes ,cholesterol ,weightloss ,digestive track problems .
100 grams of bottle gourd contain 15 calories.This vegetable is full of water (about 92%) and minerals to keep our body hydrated .


Now I am ready to share you the simple recipe .



INGREDIENTS: 1) Bottle gourd or Lauki –
2) Gram flour: 150 grams
3) Red chilly powder : 2 to 3 tablespoons
4) Red chilly :2 to 4 (Cut into small pieces )
5) Turmeric powder : 1/3 spoon or less than that.
6) White oil to fry.

Salt to taste.




Mix all ingredients ( gram flour ,white oil ,turmeric powder,red chilly powder ,salt).





Slice lauki in a good looking shapes .I cut these in half moon shape .































Keep the mixture aside 
for 20 minutes for better result in frying.It will make a crispy snack.








After the standing time we are ready for frying.

 Dip lauki slice in ready batter and pour in hot oil.


Deep fry the sliced lauki pieces .

Drain the eccess oil and take out from karai .


Our hot lauki pakora is ready .Take these pakoras with hot tea.







Enjoy  pakoras as evening snacks .

M00NG DAL HALWA





 Now in recent ,we are passing through the crucial time I mean to say we are fighting with Corona virus .We are in lockdown situation .We have to stay at home for our own safety . We are nothing to do .All shops along with sweet shops are closed .

 Recently my grand daughter asked me for some sweets .I thought why not I made Mung dal halwa which is she likes very much.

Mung dal halwa is an authentic North Indian recipe .It is usually made on festive season like Holi ,Diwali etc.Though I am a Bengali I am always eager to prepare different sweet dishes .Moong Dal halwa gives nearly 200 calories.It needs 30 minutes to cook .

So start with preparing Moong dal halwa.





INGREDIENTS:

1: Moong dal (Yellow dal) : 250 gram

2: Sugar : 200 grams

3: Deshi Ghee (Clarified butter):150 grams to 200 grams

4:Cardamom : 5 to 6 in numbers.

5: Dry fruits
:
Cashew nut: 50 grams
Almond : 50 grams
Raisain : 50 grams

 6:Dry milk powder :2 to 3 packets

Use dry cotton cloth to clean the layer of Moong dals .

Place a pan on gas oven .Pour required amount of Moong dal in the pan .Roast dals properly by constant  stirring until it comes golden brown . The raw aroma of Moong lentils should go away .
Always halwa is made in low flame.

Take out dry roasted dal from pan, allow to cool and make a dry dust in grinder .Keep in mind that

 dal dust should not be so smooth , it will hamper the perfect  consistency of halwa.









Add 100 grams of deshi ghee in pan,  start heating .Wait for minutes for perfact ghee aroma .Now add dust Moong dal and this is the time for constant stirring.I t is very tough job to stir contiuniously but we have to do it .

Halwa has the raw aroma moong lentils and it should go away completely before start with next step. Add sugar in it . .Blend sugar with dal properly.









Cut almonds in small pieces.Roast all dry fruits with ghee .Do,nt fry too much .Roast only for good aroma of deshi ghee.

Now add all dry fruits in Moong dal which is enriched with ghee,they have granular consistency.  Start blending and after that add dry milk powder in it .





 Again start stirring all  ingredients .Do it at that of time when the fat separated from Moong dal .


Add cardamom dust  and mix well.


 



Take a break of relief ,thanks to my hand.It is really hard to do the work.

Our  mouth melting texture of MOONG DAL HALWA is ready to serve .I am really happy for 
making this delicious sweet dish .My little princess , my grand daughter cheered up for this  tasty sweet dish.


Serve hot or cool
