PAPAYA BITTER GOURD CURRY,Bengali dish/PENPER SUKTO




 It is an authentic Bengali dish from old grandma's cookbook. I came to know this traditional bengali recipe from my grandMa's diary. I collect a green fresh papaya from my backyard garden for thus recipe. 



So it is obvious that the taste of dish is much
 much better๐Ÿ˜Š.

Here is the recipe :




Ingredients :Papaya : 1
Drumsticks :2
Bitter guard :2
Peas : 1 handful
Bengali Bori : 5 to 6
Masalas: Ginger paste:2tablespoons
Sugar : 2 to 3 teaspoons
Corriander powder : 2 tablespoons
Salt according to your taste.
This recipe preferably sweeter than salty.
For tempering I use mustard seeds ( 2 teaspoons), red chilli (1)
Mustard oil : 2 tablespoons, you may use white oil.
Deshi ghee : 2 teaspoons
PROCESS : Wash papaya properly. Peel off the skin of papaya. Grate papaya with the help of grater and keep in a bowl.
Cut drumsticks in small 4" inches pieces. Peel off it's skin also.
Slice bitter guards in round thin shapes.
Wash all vegetables.
Keep a korai on gas and switch on the gas.
Add mustard oil and wait for become hot. Fry bengali bori and keep aside. Fry all sliced bitter guards till turn brownish black. Take out from karai.
Now add mustard seeds and red chilli in this oil.. When a beautiful aroma comes out pour grated papaya,drumsticks pieces, peas. Stir well, now add ginger paste, corriander powder,salt. Keep a lid on karai in that stage. Wait for 10 minutes for perfect boiling.
After that use sugar and fried bori. Give another 5 minutes for perfect mixing.
Now pour little deshi ghee. Wait for 10 minutes before serving. It is a sweet in taste dish.
Serve hot with hot rice. It is really an appreciable dish among most bengali old authentic dish.

INDIAN OLIVE, WILD OLIVE CHUTNEY/JOLPAIER CHUTNEY




In this season we can easily find indian olives in vegetable market. It is necessary to take seasonal vegetables for your good health. It is right that Indian olives are really very sour to taste but it is very good for your health. Form my childhood I like sour taste very much๐Ÿ˜„๐Ÿ˜„.My grandma made many different pickles which were mostly consumed by me every time..๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜„.Still now I love chutneys, pickles etc.
So for that I like to share simple Indian olive chutney.I use little tamarind in this chutney for better flavour and taste also.
Here is the simple recipe :



Ingredients :1)Indian olives: 6 to 7 in numbers
(Don't take many olives, it will hamper your ready recipe, you wonโ€™t take because of too much sour)
2) Tamarind : 2 to 4 pieces( use green tamarinds from local market,don't use matured tamarind)
3) Sugar: 75 gms approximately /you may use jaggary powder,in that case take little more quantity than sugar.
4) Mustard oil: 1teaspoon
For tempering:
1) Bengali Panch foron,instead of that you may use mustard seeds: 1teaspoon
2) Turmeric powder: 1/2 teaspoon
3)Dry red chilli : 1



PROCESS :1) Peel off skins of Indian olives. Keep some green skins. Wash well. Cut tamarinds in small pieces.
2) Boil olives and tamarind lightly. Drain out all water from these. It will help to release too much sour from Indian olives. Smash boiled olives with hand.



3) Put a karai on gas oven, switch on gas. Add little mustard oil. Wait for becoming hot. Pour panch foron or mustard seeds and one dry red chilli. When it splatters add boiled olives and tamarind, little salt, turmeric powder. 

Add little water.










Stir properly. Now add sugar according to your requirements and again stir. Wait for some minutes to boil sugar. Mix all ingredients so well. Give standing time to make consistency become thicker.

 
Keep patience to become cool the chutneys. Serve " Indian olive chutney/Jolpaier chutney" with rice or handmade roti as a side plate.

EGGS IN SHRIMP/JHINGE DIM BAHAR

 


EGGS IN SHRIMPS
It is a different dish of shrimp ( jhinge) from usual one and it is really a healthy and tasty as well.  
A new recipe...easy and nutritious.
 
Ingredients โ€“ 

1) Shrimpโ€“ 5 small size.
2) Eggs - 2
3) Onion slices - 1 large size
4) Raw Chilli โ€“ 2, slice in small pieces
5) White oil-3 tbsp
6) Black Cumin seeds - 2 tsp
7) Sugar-2 tsp
8) Turmeric powder (1/4 tsp), (Coriand powder 2 tsp) (Red chilli powder -1/2 tsp)
9) Coriander leaves(shredded) : 1/2 cup

Salt according to your need but in this recipe use less salt for perfect taste.




Process - Put white oil in the pan... When the oil
 is hot, beat the eggs with onions and green chillies and make an omelette. Now add black cumin seeds and green chillies with one more spoon of oil...when the smell is good, lightly saute with onion slices.






Now cut shrimps into small pieces and wash them and put them in the pan. Do not add water at all. Keep stirring... add a little turmeric, coriander powder, red chilli powder and stir again. If it boils well, add some sugar. Mix it well and take it off the gas. Sprinkle coriander leaves on the top of the dish. Serve with hot roti or rice. Everyone in your home will be very happy
